Sufood Elixir Coconut Pone
Servings: 1 baking dish / 8–10 servings Time: 1 hour 15 minutes
Ingredients:
- 2 cups grated cassava
- 1 cup grated fresh coconut (or desiccated if fresh unavailable)
- 1 cup coconut milk
- ½ cup brown sugar
- 2 tbsp Sufood Spice Elixir
- ½ cup melted butter
- ½ tsp salt
- Optional: ½ cup raisins or sultanas
Method:
- Preheat oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, combine cassava, grated coconut, brown sugar, and salt.
- Stir in coconut milk, melted butter, and Sufood Spice Elixir until evenly combined.
- Fold in raisins if using.
- Pour the mixture into the prepared baking dish.
- Bake for 50–60 minutes or until the top is golden brown and the center is firm.
- Optional: Brush with a little extra elixir while hot for a glossy, fragrant finish.
- Allow to cool slightly before slicing and serving.
