Sufood Elixir Coconut Pone

Servings: 1 baking dish / 8–10 servings                   Time: 1 hour 15 minutes

Ingredients:

  • 2 cups grated cassava
  • 1 cup grated fresh coconut (or desiccated if fresh unavailable)
  • 1 cup coconut milk
  • ½ cup brown sugar
  • 2 tbsp Sufood Spice Elixir
  • ½ cup melted butter
  • ½ tsp salt
  • Optional: ½ cup raisins or sultanas

 

Method:

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine cassava, grated coconut, brown sugar, and salt.
  3. Stir in coconut milk, melted butter, and Sufood Spice Elixir until evenly combined.
  4. Fold in raisins if using.
  5. Pour the mixture into the prepared baking dish.
  6. Bake for 50–60 minutes or until the top is golden brown and the center is firm.
  7. Optional: Brush with a little extra elixir while hot for a glossy, fragrant finish.
  8. Allow to cool slightly before slicing and serving.
